Cops will recognise stolen vehicles until they are re-sprayed.
Using disguises will help you lose the Cops. You can equip different accessories in the Inventory within the Interaction Menu before committing a crime – then, while your Wanted Level is flashing, you can instantly lose a star by removing or changing your accessories.

so take off your mask after a robbery - lose a star

Soon as masks don't delete my hair every time i fucking use one and turn me bald until I visit the barber again I'll use them more. Every time I use one now I regret it

But hey, I don't have to profess admiration for it, the locale in which hoodlums reside are enamored with it.
