I hate onions, but I ate the hell out of onion rings when I worked at a restaurant. Of course I cooked them, so the onion was just like a crunchy thing with no flavor...but the breading was great.

What's the trick to keeping the onion from sliding out of the breading in the first bite?

That is under cooked. I only cooked them in a commercial deep fryer, so home would prolly not work the same. But I would usually put em in frozen for about a minute then take em out to sit a minute, then put em back in until how I wanted them. I liked em over cooked.
