I've never been to the home deal, but I know exactly what you are talking about. That would be a good place to see all of the stuff you wanna see in action.

Yes, pilots can shut off transponders, but it isn't easy like just flipping a switch.

the secret is to buy stuff on credit you already have the money for and just pay it off directly, no interest.

That can actually hurt your credit rating from what I've heard. I've always been told to carry a small balance.
